Gelato does not manage the list of the available countries in your WooCommerce store. This is determined by WooCommerce configurations.

You can read more about this in WooCommerce's documentation Add a new country to countries list.

The new countries can also be added via some third-party WooCommerce/WordPress plugins such as Woocommerce Add Countries.
